Centerpiece and conversation piece of the stunning
architectural adaptation of our circa 1880 building is
the Piggy Bank's namesake bank vault behind the bar
(which now serves as the restaurant's wine cellar).

In planning the renovation of the building, we had
designed an open kitchen so that you would be able
to see The Piggy Bank's authentic Smoker, and to
observe the Southern art of cooking-up real Q.







::::::::: What is "Real Q" ? :::::::::

At home, "Barbeque" usually means:
a cook-out on the backyard grill,
but as good as that is, it isn't

Real Q.

Real Barbeque is a Southern tradition of
cooking meat in a closed chamber or in
a smoke pit, over smoldering hardwood.

The very best "Q"
is always cooked real   SLOW and LOW ..
slow cooking, at low temperature, a method
which renders all of the fat from the meat,
as aromatic flavor of the wood is absorbed.

When it's done, meat prepared in this way is
so tender, and moist, and so flavorful, and
it tastes like nothing else ..   except Real Q,
the way it always does at   The Piggy Bank.
